How to drink Colfondo Agricolo
CLEAR OR CLOUDY?
There is no straight answer. Everyone’s free to choose. Our rule is that there are no rules.
There are two ways of tasting ColFondo Agricolo: you can pour the wine into a carafe, after leaving the bottle standing for a while, so the yeast can fall to the bottom of the bottle. Or you can choose to taste it after shaking the bottle, so that the yeast floats, and you can fully savour the aroma that only this unique type of secondary fermentation can offer. We won’t tell you which version is better. It’s up to you.
Some like Colfondo Agricolo clear
In this case you just need to pour the wine into the glass, paying attention to move the bottle slowly, and only pour the clear part. What to expect from this choice? The classic aromas of the territory, of yeast, of ripe fruits and, with a pinch of extra attention, a light balsamic note too. If you choose the clear version, just remember to keep the bottle standing, and to pour the wine in a carafe, to separate it from the sediment.
Some like ColFondo Agricolo cloudy
This is the choice made by those who want to experience something new, and original. In this case you will simply need to turn the bottle delicately upside down and then carefully pour the wine in the glass. What will your palate and nose sense? The scent of the yeast is now enhanced, the aromas of the ripe fruits now draw a more intense balsamic note, and on the palate the wine has a fuller, richer body.
