ColFondo Agricolo<\/span><\/i> is the finest expression of the secondary fermentation in bottles of Glera grapes<\/strong>, without degorging.<\/span> Selected grapes,<\/span>\u00a0<\/span>cloudy colour and crown caps: these elements are joined in a constantly different combination, to give life to characterful, complex wines with a long life ahead of them. Naturally handmade, with a touch of rock music.\u00a0<\/span><\/p>\n<\/div><\/div><\/div><\/div><\/div>

COLFONDO AGRICOLO\u2019S COMMANDMENTS<\/b><\/p>\n

    \n
  1. \u00a0<\/span>Grow your vine among the Colli Trevigiani, the hills of Trevison, where grapes have always ripened in the sun.<\/span><\/li>\n
  2. \u00a0Make a bottle-fermented sparkling wine, without disgorging.<\/span><\/li>\n
  3. \u00a0<\/span>Bottle between March and June, after the vintage, and sell the wine one year after it\u2019s bottled.<\/span><\/li>\n
  4. \u00a0<\/span>Use a crown cap.<\/span><\/li>\n
  5. \u00a0<\/span>Use these grape varieties: Glera at least 70%, and\/or historic varieties such as Perera, Verdiso, Bianchetta, Boschera, Rabbiosa up to 30% maximum.\u00a0\u00a0<\/span><\/li>\n
  6. Use grapes from vineyards you own, and personally selected.<\/span><\/li>\n
  7. Don\u2019t be afraid of time passing by: these wines are surprising even years after bottling.<\/span><\/li>\n
  8. Enhance the identity of each vintage with a band of different colours on the bottle.<\/span><\/li>\n
  9. Drink it as you wish. Cloudy or clear. The choice is up to you alone. <\/span><\/li>\n
  10. Share it with some friends and some sopressa<\/span><\/i>, a typical local salami: the perfect match.<\/span><\/li>\n<\/ol>\n<\/div><\/div><\/div><\/div><\/div>

    Handmade wines\u00a0<\/b><\/h3>\n

    When we make our wines, we almost feel like tailors. The fabric is made of soil, vines and grapes, and what\u2019s left for us to do is to cut and sew, to give life to our creation: unique, personal, non-repeatable. A slow wine, respectful of time and of times,<\/strong> which needs patience to be born, and patience to be drunk. It\u2019s not a simple drink, but a sublimation of life, the life of a vintner. This is the bottle that is never missing on the table, and which tells an unfiltered story of expertise and effort, honesty and sweat, freshness and simplicity.<\/span><\/p>\n

    Each vintage is different\u00a0<\/b><\/h3>\n

    We\u2019ve decided to differentiate each vintage with a band of a different colour. We did this because we believe in the evolution of the wine, year after year. ColFondo Agricolo includes wines that are similar in terms of aromatic fragrance, notes of evolution, drinkability, pleasantness and fine bubbles. But essentially these are always very personal bottles which, on top of being different depending on the vintage, stand out because of the soil and the interpretation of each vintner. Their strength is in their strong identity. They\u2019re never the same, or banal.\u00a0<\/span><\/p>\n

    Why we choose a crown cap<\/b><\/h3>\n

    Reliable, practical, expressive<\/span>. <\/span>At ColFondo Agricolo we all agree that the perfect closure for this type of wine is a crown cap. This has become a crucial point in our rules.<\/strong> A technical choice: over time, we\u2019ve learnt that this solution allows us to preserve the fragrance, the aromas and scents of the wine, and it allows us to continue the tradition that sees crown caps typically used with bottle-fermented wines.<\/span><\/p>\n

    Long live ColFondo Agricolo<\/b><\/p>\n

    Based on the regulations, ColFondo Agricolo wines must be bottled between March and June, following the harvest. They can be sold mandatorily one year after bottling. A choice that wants to convey and give value to the longevity of this wine<\/strong> for which, usually, people wait only a couple of months before starting to sell it. Instead, when left in the bottle, it can offer some big surprises.<\/span><\/p>\n

    A certified fine quality\u00a0<\/b><\/h3>\n

    We believe the utmost seriousness of the project is a crucial value. This is why new wineries that want to join the Colfondo Agricolo project are selected by an outside tasting committee, directed by Giampaolo Giacobbo, who collaborates with the Slow Wine Guide and teaches in the Master Degree of Wine and Communication at Universit\u00e0 di Scienze Gastronomiche di Pollenzo.<\/span><\/p>\n

    Early in 2020 we created a project group formed by oenologists, sommeliers, wine shop owners and wine lovers<\/span> who are experts of this type of wine. The group must assess – in a strictly blind tasting – the quality of the Colfondo from the wineries that have joined the project, and the ageing potential of the old vintages, taking into account the adherence to its typical identity and the micro-terroirs expressed by the wineries.<\/span><\/p>\n

    Each year the committee meets, between November and December, to assess the ColFondo Agricolo wines before they are commercialised. It also assesses any wineries that would like to join the project. Following the unquestionable judgement of the committee, the wineries that receive a negative result cannot use the ColFondo Agricolo brand.<\/span><\/p>\n<\/div><\/div><\/div><\/div><\/div>
